Hello divas! I hope that your week is going well so far. I don’t know about you but this week has been super busy as the holidays are over and things are returning to normal. Which means my time has been limited this week when it comes to preparing dinner. While eating healthy doesn’t have to be time-consuming, when it gets busy it is sometimes just easier to get some fast convenience food for dinner.
I love meals that are simple and can be thrown together easily. This Healthy Vegetarian Asian Quinoa Salad is just another of my easy healthy recipes that can be made in 20 minutes when you are strapped for time. It is filled with lots of healthy goodness, contains no meat if you are a vegetarian (or are just enjoying a Meatless Monday), and makes enough for leftovers to take for lunch the rest of the week!
Salads are always some of my favorite go-to recipes when I need something quick and healthy. They also usually make enough servings for me to take to work for lunch for at least a few days (or for a healthy meal later in the week!). I especially love that I can make them with whatever ingredients I happen to have on hand.
This recipe is super easy and perfect for those busy weeknights when you don’t have a lot of time to create a healthy meal. You simply cook the quinoa and combine all the ingredients into a large mixing bowl while it is on the stove. Once the quinoa is done, add it to the mixture and pour the dressing. You have a filling, healthy vegetarian meal for your busy lifestyle.
