Hello divas! I hope that you had a great start to the week. It’s starting to get a bit busy around here but I can’t complain too much. I have officially starting my half marathon training for Virginia Beach which means I am also starting to pay closer attention to what I eat.
So I don’t know about you but my mornings can sometimes be pretty hectic. I mean between my early morning runs (it get too hot otherwise) then getting ready for work, I usually don’t have a lot of time for a big nutritious breakfast. On a lot of these types of mornings, I often opt for breakfast through the drive thru (Dunkin Donuts is my fave) or sometimes even skip breakfast all together.
One way that I try to counter this cycle is with some of my easy healthy recipes that are both delicious and good for you. Today I want to share a yummy east healthy breakfast recipe that doesn’t take long to make, is easy to throw together and (better yet) you can grab on your way out the door – my easy healthy banana almond muffins.
If you are a regular reader, you know that I love breakfast foods. I will eat them at any point in the day for sure. And muffins are among my favorites because they are so portable for those busy mornings or if you just want a snack in the afternoon. I especially love it when muffins are good for you.
This particular recipe is so easy to make – it is only 6 ingredients are are done in 20 minutes from start to finish. I added some vanilla protein powder (my shakeology) both for flavor and to give these muffins a bit of a nutritional boost. You can also add additional fruits (such as apples) and nuts (walnuts) if you like.
To make these yummy muffins, all you do is preheat the oven to 350 degrees. Then you mix together 2 eggs, 2 medium bananas and 1 tablespoon of butter. Next, you combine almond flour, baking soda and protein powder in a separate bowl. Combine the two mixtures together, spoon into a muffin tin and bake for 15 minutes. When done, you have a healthy breakfast or snack that the whole family will love.
