Hello divas and happy Thursday! I hope your week is going well so far and are making plans for a fun weekend. Thursdays at Divas Run for Bling are such fun because it is a time for me to share a favorite healthy recipe of the week. It’s been a couple of weeks since my last recipe but I am back with a super yummy one this week – Beer and Lime Grilled Chicken and Rice.
I tried this recipe out last night and it was a big hit. Some notes about the recipe to keep in mind. I used Bud Light with Lime as the beer to marinate the chicken in. This can also be done with lime juice and your favorite beer. I also used an italian spice mix in the rice that is ground locally here in Chattanooga. You can also substitute that for oregano or any other italian spices. You can also use wild rice as a substitute for the brown rice. I added some salad greens and basalmic vinaigrette to make it a complete meal. Yum.
