Hello divas! I hope that you are having a fantastic week so far. Now, that summer is officially here, I have been spending a lot of time outdoors. One of my favorite things to do this time of year is to actually cook outdoors. If you are a regular reader of this blog, you know that I love easy healthy recipes and I love my grill. I mean I am a southerner born and raised so I have a thing for grilling in the summer – especially on my beloved charcoal grill. So today I am working with Smithfield® to try out their Extra Tender Back Ribs with my own Blackberry Balsamic Glaze to create some blackberry balsamic glazed pork ribs.
There is just something about cooking over charcoal outdoors that equals summer in my mind. I grew up watching my parents to so and I have never cooked over gas as I just love the smells and flavors that charcoal gives you. And better yet, it is also EASY to have a grill out any day of the week. No matter you expertise, you can grill a great rack of ribs thanks to Smithfield®. I love Smithfield Ribs because they are are hand-trimmed, extra-tender and juicy. They have no added hormones or steroids. The Extra Tender variety that I use makes it so easy to have a perfect set of ribs for your summer meals.
To prepare my ribs, I started off by going to my local Walmart to pick up a rack of the Smithfield Extra Tender Back Ribs and some fresh blackberries for my glaze. The ribs were in the meat section and are easy to find in your local store.
To get the perfect set of ribs, it is all about preparation. The first thing that I do is to put the charcoal in the bottom of the grill and light them so that they heat up. While the charcoal is cooking, I set out to prepare the blackberry glaze. It’s super easy – only 4 ingredients. I simply whisk them all together then brush over the ribs to marinate.
Once the charcoal is ready, I put the ribs on the grill and brush a little more of the glaze while they are cooking. It usually takes about 30 minutes or so to grill. I always love some grilled veggies with my grilled meats so this is a good time to throw some corn on the cobb or fresh veggies to have with the ribs.
