Hello divas! I hope that you are having a fabulous weekend so far. Here in Tennessee, the weather has been stunning so I am loving the sunshine. One thing I did this morning was make a batch of my yummy clean eating blueberry avocado muffins. Now ya’ll know how I love my muffins (check out my other muffin recipes on my easy healthy recipe page). So it is no surprise that these are a big hit at my house.
Now I will be upfront in saying I am not a big avocado fan. I generally don’t like them plain, I don’t like guacamole and I don’t like them in smoothies. So you are probably looking at the title of today’s post and wondering why the heck I am sharing a recipe that has avocados in it. As you probably know, avocados are chalked full of vitamins and minerals, including the good fats that help lower cholesterol. And it is when you substitute avocados for saturated and trans fats that you can make some of your favorite foods healthier.
I had so much fun at Fitbloggin’ last year (and can’t wait to go back this year!). One morning, one of the sponsors, the Avocado Commission, had these yummy looking muffins for us to try for breakfast. I went up to the reps and explained how I really don’t like avocados but I would be a sport and try them anyway. OMG ya’ll. These muffins were to die for. The best part was that instead of butter, avocados were used. Seriously. Pretty much almost all the fat in these muffins were the good fats.
So today I am adapting the Blueberry Avocado Muffin recipe to share with all you lovelies. I have substituted the wheat flour instead of all purpose flour , Truvia baking blend instead of sugar and the greek yogurt instead of plain yogurt. I have also left off the streusel topping.
