Hello divas! I hope that you are having a fabulous week so far. Mine has been a bit busy but good. I had a great physical therapy appointment this week and am happy to say I only have one more appointment left in two weeks to checkout and evaluate.
As you can imagine, I am glad to be almost back to my normal. And part of this whole getting on track and staying on track process also includes my nutrition. If you are a regular reader, you know how much I love easy healthy recipes. So today I am sharing another of my favorite easy healthy meatless recipes – my clean eating bruschetta quinoa bake.
If you are a regular reader on this blog, you know that one of the things I struggle with at times is good nutrtiion. One way I am trying to accomplish this is trying to eat as clean as possible. Now I will admit to a donut at Dunkin’ Donuts about once a week, the occasional fast food, and ice cream or frozen yogurt at night. But I am also trying to watch my portion size and snack on fruits and veggies as much as possible and eating lean meats (when I eat meat). It’s a work in progress :).
This brings me to today’s recipe. I am always trying to find meals that are easy and still healthy. I don’t always make my morning runs so my after work and evening time consists of my runs and workouts, cooking dinner and (most nights) blogging. I really love casserole type dishes and crock pot recipes because you can put everything in the dish and cook. Maybe add a salad and you are done. This recipe fits into that category perfectly.
This recipe is fairly easy and takes 30-45 minutes to cook (though a lot of that time it is in the oven or on the stove so I can do other things while it is cooking). It is clean and vegetarian (which I love, my hubby tolerates). And even better, it is good for my diet.
