Hello divas! I hope that you had a fabulous weekend and are looking forward to the week ahead. My weekend was pretty great. The hubby and I have a soft spot for our local minor league baseball team (that’s where we had our wedding reception) so we attended our first game of the season on Saturday. Which brings me to today’s easy healthy recipe. When I think of sports (doesn’t matter – baseball, football, hockey, basketball, you name it), I think of tailgating and wings (see my 25+ game day recipes). I am a big fan of wings (and just about anything else in buffalo sauce for that matter). So today I am sharing my super yummy buffalo chicken casserole recipe that the hubby and I enjoyed while watching the football fun from home.
This recipe is fairly easy to make. It takes a little longer to bake in the oven, but the preparation is pretty straightforward. It is healthy recipe that is packed with protein. To make a complete meal, I paired this casserole with some salad greens and we were good to go.
The first thing you need to do for this recipe is mix the buffalo sauce. From there, coat the potatoes and spread them in the bottom of a greased casserole dish. You will bake these potatoes on 500 degrees (yes 500 degrees) for about 30 minutes. While the potatoes are baking, you will marinate the chicken in the leftover sauce and prepare the topping. Once the potatoes are done, add the chicken and the cheese topping, decrease the oven temp to 400 degrees and bake for another 20 minutes.
When done, you have a fabulous dish that will be a hit for the whole family. I added some ranch dressing on top to help offset the kick of the buffalo sauce. It also works well with blue cheese dressing as well, though.
