Hello divas! I hope that you had a fabulous holiday weekend. Mine was pretty busy on Saturday and Sunday but very relaxing yesterday (thank goodness). I have especially loved playing around in the kitchen. We all know how important breakfast is but I for one do not always have the time to make a healthy breakfast on those busy mornings. This is why I love crepes. They are kind of light omelettes in that they are super quick and relatively easy to make – just with a batter instead of eggs. And I love to add extra goodies to the batter such as protein powder (I have done this in the past with muffins). So today I am sharing another easy healthy recipe – chocolate protein crepes.
If you know anything about me, you know that I have a serious sweet tooth. I have been trying to reduce my sugar intake and use things like fruit when the needs for something sweet strikes. This is why a Shakeology for breakfast is so good for me. It’s filling and healthy but also a little sweet. Today’s breakfast recipe is just the same. It is loaded with protein yet still has that touch of sweetness I love in the mornings.
These crepes are also super easy to make. I made mine from start to finish in about 10 minutes so it is perfect for those mornings when you are running a little late (just about every Monday for me 🙂 ). These can also be customized to your tastes and what is in your pantry. Not a big chocolate fan? You can use some vanilla or even a flavored protein powder like strawberry. You can also substitute the strawberries and blueberries for other fruit like peaches, bananas or mango and pineapple if you are feeling tropical.
You start the recipe by mixing together the protein powder and your eggs. Then you pour about 1/4 cup of the batter into a small fry pan or an omelet pan and cook for about 2 minutes. Flip the crepe over for 30 seconds then set aside on a plate.
From there you would mix your filling and spread on the crepe. Add your desired fruit and fold. When done, you have a healthy and filling, protein packed breakfast that is sure to be a hit for everyone in the family.
