Hello divas and happy Thursday! The week is quickly coming to an end and I hope that it has been fabulous. It is Thursday here at Divas Run for Bling which means it is time to share another yummy, healthy recipe that I have tried out this week. With a few weeks left in summer, today’s recipe is perfect.
As you probably already know, I have 2 weaknesses when it comes to food – fast food (read: french fries) and sweets (read: ice cream). I have been known to watch my calories and nutrition all day long and save up just enough of each to be able to have a bowl of ice cream at night – even in the middle of an arctic blast in January. I just love ice cream. But as we all know, ice cream in general is not always so good for you. Depending on what kind you get, it can be loaded with calories, fat and sugar. I have tried to eat frozen yogurt and sugar free varieties instead and they have been great, but there is just something about a bowl of Ben and Jerry’s Chunky Monkey or Half Baked ice cream.
This week for Recipe Thursday, I am sharing a homemade, healthier version of my favorite Chunky Monkey ice cream. This recipe is super easy to make, has no added sugar, requires no ice cream maker and is oh so yummy. You can even make it vegan with the right kind of peanut butter and chocolate chips. Oh and depending on how long you let it freeze, it can be either a nice bowl of ice cream or a yummy milkshake on the go. The recipe itself makes four 8 oz. servings, but if I am having it as ice cream, I only eat about half that. The 8 oz. serving is only 143 calories so this fits my calorie needs for the day.
