Hello divas! I hope that you had a fabulous weekend and are looking forward to another great week ahead. Mine was pretty fun with my 15th half marathon in Nashville. But I am glad to be home and getting back on track. If you know anything about me, you know that I love to sleep. As in, I wait until the very last minute to get out of bed most morning. Which does not leave a lot of time for a healthy breakfast unfortunately. So I am always looking for new and easy breakfast recipes. Oh and I love my crockpot – I use it year round. So today I thought I would share another super easy healthy recipe that cooks overnight in the crockpot – my healthy crockpot breakfast casserole that is perfect for any holiday breakfast, a Mother’s Day brunch or just plain busy morning in your household.
If you have read this blog, you know how much I adore my crockpot. I use it multiple times a week during the fall and winter as it is a great way to prepare healthy meals from home without too much hassle. These dishes can be side dishes, complete meals, desserts and even breakfasts (such as my crockpot pumpkin oatmeal). Today’s recipe is no different. It is easy to prepare, easy to cook and oh so yummy to eat.
What I love about cooking breakfast in the crockpot is that it is so convenient. You basically just throw the ingredients into the crockpot, set it to cook while you sleep then get up in the morning with a delicious meal ready to eat. You can use any ingredient you want to make this casserole. I opted for a healthier version with some turkey bacon, reduced fat cheese and some peppers and onions.
