Hello divas! I hope that you have had a fabulous week and are looking forward to another wonderful weekend. I am so excited about this post today. I don’t know what store you use when you buy groceries, but I love going to Food Lion. They just redesigned their website and I was thrilled to be able to check it out and submit one of my recipes, my crustless veggie quiche, to the site.
The new Food Lion website is just loaded with great information that will help you and your family eat well and save money. It is so easy to navigate. If you want to become an MVP member (it’s free!) in order to get extra savings, there is a link at the top of the page to do that. Do you want to know what is on sale this week? Check out the weekly specials. Need some coupons to save even more? Check out the coupon link and then either load them to your MVP card or print them out to take with you. There are sections to learn about the different departments and the brands that are carried. And there is also my favorite part of the website – the recipes. This is the portion of the site where shoppers can share some of their favorite recipes. I tried my hand at the recipe portal and added my crustless veggie quiche to the site.
As you know if you read my blog regularly, I am always trying to find and create recipes that are delicious, easy to make and still be healthy. While I love a good donut or pastry as much as the next person, I wanted to share a yummy recipe that is perfect for either breakfast or lunch and will also keep you fuller throughout the morning. The best way to do that is with protein. I love a good quiche for this but I don’t always like the crust so I thought I would create an easy and nutritious quiche sans the crust.
You start out by preheating the oven to 350 degrees and spraying the bottom of your dish. I opted for a small casserole dish but you can use any oven safe dish you like. A pie or quiche dish would work as well. You will want to chop up the veggies then layer them on the bottom of the dish.
Next comes a layer of the shredded mozzarella cheese.
After the cheese you will want to set the dish aside to prepare the egg mixture. In a large bowl you will whisk the eggs and egg white, salt, pepper, seasoning and milk. It then gets poured over the veggies and cheese in your baking dish. Make sure that it is even so that it will bake well.
You will top this with the feta cheese and bake for about 45 minutes or until the filling no longer jiggles. Let it set for 10 minutes before serving and you have a delicious and healthy breakfast or brunch option.
