Hello divas! I hope that you had a fabulous weekend and are ready for another great week. I know that summer has arrived and if it is anything like mine, my time has dwindled. It is a super busy time of the year that’s for sure. As you know, I am always on the lookout for new easy healthy recipes that can make dinner preparation just a little bit easier for those busy weeknights. Now I am a BIG fan of pizza so I thought I would share my easy healthy chicken pizza as a way to have a fun and healthy quick meal.
If you are a regular reader on the blog, you know that I love pizza. It is probably one of my favorite foods because it is relatively easy and oh so yummy. However, I also know that it is not always the healthiest food either. It tends to be a bit on the carby side. So I am always trying to find ways to make it just a but healthier (see my quinoa pizza bites and my veggie hummus pita pizza recipes). Today’s recipe is no different.
For this particular recipe, I used whole grain tortillas as the crust for the pizzas. You start by placing the tortillas on a cookie sheet. Next you want to add the pizza sauce. I used my homemade crockpot marinara sauce that I keep in the freezer for various pasta and other Italian recipes but you can use any of your favorite pasta or pizza sauce. Next I added some chicken that I had grilled and cut into small pieces. Finally, I topped the pizzas with 3 types of cheese – feta, mozzarella and parmesan. The pizzas are baked at 425 degrees in the oven for about 10 minutes.
The great thing about this recipe besides the fact that it is so quick and easy is that it is also extremely customizable. If you do not like or want tortillas as your crust, you can also use pita, english muffins or store bought pizza dough. You can also leave off the chicken if you are vegetarian or do not want meat (or substitute it for any of your favorite meats). If you need a few more veggies, you can add your favorites such as mushrooms, peppers or spinach. It is really up to you as to how you want to top your personal pizza.
