Hello divas! I hope that you had a fantastic weekend and are ready for another week ahead. I was a bit under the weather this weekend so I stayed inside a lot. Which was good because it was hot, humid and muggy. When it gets so hot like this, I love nothing more than a good salad. They are light, usually cold and easy to make. That is where today’s easy healthy recipe comes in. This easy Italian pasta salad is perfect for an easy dinner, taking your lunch to work or for a great barbecue or picnic.
If you have ready this blog, you know that a good, healthy pasta salad is one of my favorite meals. This variation of that basic recipe includes fresh grape tomatoes, a homemade Italian dressing and, of course pasta. You can even add your favorite lean meat if you like.
This salad is super easy to prepare. The first thing you want to do is cook the pasta as it directs on the box. I chose the tri-color veggie rotini that contains a full serving of vegetables to add to the nutrition of this dish. While the pasta is cooking, cut the tomatoes and mushrooms and mix the dressing. Once the pasta is done, toss it into a large salad bowl.
Next, add the vegetables and cheese and mix.
Then comes the homemade Italian dressing and mix well.
Refrigerate until ready to serve and you have a super easy, healthy weeknight meal.
