My mother was a cook book collector. She loved them. She had some favorite recipes and some handed down family recipes, but often, she would have to look through several cookbooks to find the one she wanted. She needed a list of great easy recipes, but it would all have to be handwritten.
Now days with a computer in so many homes, we have easier access to thousands of recipes! Yet, there is a problem with that, too. So many recipes, so little time to look through them all. Just like in my mother’s day, before computers, we still have to gather the great ones.
I find it helpful when others make a nice list of their favorites or create a round-up of recipes for me. Here are several great easy recipes I have collected for you. I included some hints on how to make some of them a little healthier.
Clean Eating Brushetta Quinoa Bake – Divas Run for Bling
Easy Pumpkin Soup – Designs of Home – substitute skim milk for whole, to make it a little healthier.
Fiesta Vegetarian Spaghetti – 3 Boys and a Dog
Beefy Vegetable Soup – Designs of Home – omit beef or use leaner cuts. Or, you might try chicken, instead of beef.

Crockpot Grass Fed Beef Roast – A Life in Balance
Easy Crockpot Apples – Designs of Home – If you are using sweet apples, you might be able to cut the sugars by half. This is a great way to use up the fresh apples you may have on hand.
Heather has many healthy recipes on this blog and you should take a look at them. I am sure you will find something that tastes great and is still a healthy version of what your grandmother used to make, such as her Pumpkin Pie!
You can use any of these recipes any time of the year, but they are especially good, right now, when it feels a little cooler outside and/or you are in a hurry and need a nice crockpot dish or another great easy recipe.
