Hello divas! I hope that your week has started off well. Mine has been pretty good except for the fact that I am still recovering from my sinus issues from the weekend. But it has been a pretty good August so far. We only have a few weeks or so left of summer which also means that grilling season is coming to an end. So today I thought I would share another easy healthy recipe that will be a great addition to any of your end of the year cookouts – my grilled honey bourbon glazed chicken.
I am what some would call a flexitarian. I eat meat but I don’t eat it all the time. I would say about half the week is spent going meatless. One thing I do love doing, however, is grilling. I just love grilling some of my favorite healthy menu items in the summer. There is just something fabulous about throwing some chicken or pork chops or, in my case, deer over the charcoal flame. But I wanted to add a little umph to my chicken last week so I decided to make a skinny version of a honey bourbon glaze using some good old Kentucky bourbon.
This recipe is pretty easy to make. The first thing to do is mix all the glaze ingredients into a mixing bowl.
Then you will want to brush over the thawed meat (in this case boneless skinless chicken breasts) and let set for at least an hour to marinate. This worked out great for me as I prefer a charcoal grill so I was able to do this step while the charcoal was burning.
Once the grill is ready, you simple place the meat on the grill to cook. This grilling time will vary by the type of grill you have. Once the meat is cooked through, you are done and ready to enjoy.
