Hello divas! I hope that you had a fantastic weekend and are ready for another great week ahead. It was hot here in Tennessee so I spent a bit of time indoors trying to stay cool. I am so excited about this week, however. It’s vacation week – or rather race cation week lol. The hubby and I are heading to Chicago to run the Rock n’ Roll Half Marathon this weekend and I am soo excited. Before we leave, however, I thought that I would share another easy healthy recipe with ya’ll. As you know, I am a big fan of the 21 Day Fix program. It is the one home workout program that literally changed my life (see why working out from home rocks). I not only got my daily workouts in just 30 minutes a day but it taught me more about healthy eating than any diet I ever tried out. So to celebrate the start of the program, I thought that I would share a fabulous healthy recipe that is also 21 Day Fix approved – my easy healthy baked penne.
This recipe is fabulous and is ready to eat in 30 minutes. If you are following the fix plan it is also 1 purple container (the marinara sauce), 1 red container (the meat), 1 yellow container (the pasta) and 1 blue container (the cheese). For those not on the fix nutrition plan, it is simply a low-calorie, quick and healthy meal that is perfect weeknight meal for the whole family.
It is also easy to make. You simply cook the penne according to the box and brown the meat. For a vegetarian version like I made, I used some meatless ground meat to get a more plant based protein. Once those two ingredients are done, you combine them with the sauce (I used my homemade crockpot marinara), seasonings, vinegar, parmesan and honey. Pour into a large casserole dish, top with Italian cheese and bake for 20 minutes at 250 degrees.
This recipe is pretty customizable to your tastes. You can add some additional veggies if you like such as mushrooms. You can also use ground turkey or wild game like venison if you are a meat person.
