Hello divas! I hope that your week has gone well and you have some fabulous plans for the weekend. I just love July. It is one of my favorite months because it is the month of my anniversary. This year will be number 7 for the hubby and I and, as always, we will be celebrating while watching some of America’s pastime – baseball. This year we will be celebrating at home with the help Coke and REESE’S Cups as both of our favorite teams and our local minor league team will be out of town.
Now you are probably wondering what is up with the baseball thing, right? Well baseball (and sports in general) has played a big role in our relationship. We hit it off immediately when we met because we were both such big sports fans. Numerous dates have been to sporting events (where we usually rooted for separate teams – Erich loves Boston, I’m an Atlanta girl). Our first “I love you” was at a minor league baseball game. Heck even our wedding reception was at a baseball game.
Needless to say – we are big fans :). But just because we are celebrating at home this year doesn’t mean we can’t make it special. I thought it would be super fun to make a couple easy healthy recipes as snacks for when we are watching our favorite teams play baseball. This summer’s Share a Coke campaign is the perfect way to help celebrate our big day. It is bigger than ever with 1000 names printed on bottles available at Walmart.
The hubby grew up just north of Boston and loves root beer floats. Now I am a Georgia girl born and raised so I am not a root beer fan. I do, however, LOVE Coke. So as we celebrate, we will be drinking a healthy Coke float and snacking on a yummy trail mix that features REESE’S Peanut Butter Cups.
The first thing I had to do for these recipes was buy the ingredients. So I went to my local Walmart to pick up some personalized Coke bottles (find your name) and REESE’S Cups that feature fun sayings (exclusive to Walmart). Walmart has the widest and most organized selection of Coca-Cola personalized 20 oz bottles so this was the perfect opportunity. I opted for Diet Coke for my float recipe as it is lower in calories. Also, I want to note that the hubby spells his name is a totally unique way (Erich) which does not appear on Coke bottles so the closest I could get was “Erick.” (If you have a unique name like him, you can now make your own Coke bottles). So I found our names, picked up a few cans with related sayings (Sweetie, Soulmate and Better Half) on them and, of course, the super fun REESE’S Cups.
Next I headed home to create my recipes. I put some greek yogurt on a cookie sheet and put it in the freezer to freeze while I created the trail mix. This snack is super easy to make. Basically you just combine the granola, dried cranberries, almonds (I opted for the dark chocolate roasted) and REESE’S Cups into a bowl and mix together. You will need to cut the REESE’S Cups into smaller pieces.
Once that was done, I set the mix to the side to construct my healthy Coke float. I took the now frozen greek yogurt out of the freezer and put the pieces in the bottom of a glass. I then poured the Diet Coke over the greek yogurt and now have a delicious treat.
