Hello divas! I hope that your weekend was fabulous and that you are ready for a wonderful week ahead. Mine was pretty low-key which was nice and I got some things done around the house.
I am so ready for spring, though. I know I still have a couple of months, but that doesn’t stop me from hoping (the warmer temps here in Tennessee doesn’t help either!). And with spring, comes on of my favorite holidays – St. Patrick’s Day. This also means that I look for some “green” food to enjoy over the holiday.
As you know, I have a serious sweet tooth. I have been trying to eat clean and limit my sugar this year, but I love my sweets. I am always trying to find ways to indulge in some sweetness without the guilt that comes with killing the diet. This time of year as spring approaches, I just think about how much I love key lime. So today I am sharing another easy healthy recipe – my light key lime cupcakes with greek yogurt icing.
Growing up, I always loved a good key lime pie. My aunt lived in south Florida so she would bring up some key limes and other citrus every time she visited. To this day I still love a good key lime pie when I am out and about, especially in the spring and summer as the temperatures start to get warmer. My mom even makes this fantastic key lime cake recipe for Christmas every year. I like to make these when I want something green for St. Patrick’s Day.
But key lime cake is also great for this time of year because it is so light. For this particular recipe, I chose to start with my mom’s key lime cake recipe and make it into a lighter version and cupcakes instead. I have lightened up the original recipe to use egg whites instead of eggs, coconut oil instead of canola oil and sugar free gelatin. Whipped greek yogurt is perfect for the icing, giving it the feel and taste of icing without all the extra sugar. And, of course, I made is extra festive for St. Patty’s Day with some green sprinkles.
