Hello divas! I hope that you had a fantastic weekend. Mine was so good. My Atlanta Falcons made it to the Super Bowl! Even better they are playing my hubby’s Patriots so the next couple of weeks will be interesting in my house for sure lol.
It’s been a bit busy around here what with work and physical therapy and such. To be honest, I have been having a bit of a hard time getting up early enough to fix a healthy breakfast lately. Has that ever happened to you? That’s where today’s easy healthy recipe comes in to play. I am sharing my healthy mediterranean veggie omelette recipe that is delicious, nutritious and easy to make.
I have always loved a good omelette (check out my veggie omelette bites). It is loaded with protein thanks to the eggs and you can make it however you like – veggies, meats, cheese, nothing at all. It is also perfect for any meal of the day. I love having breakfast for dinner ever so often and this recipe just hits the spot. Oh and did I mention how easy it is to make. Seriously. It takes about 10 minutes from start to finish and is only 3 easy steps.
For this particular omelette recipe, I opted for a mediterranean feel. I started by whisking two eggs in a mixing bowl then pouring them into an omelette pan (a small fry pan will also work).
Next, I let the eggs cook for a couple of minutes until they started becoming more solid. I then added the ingredients. I personally do not like olives so I left those out of this mediterranean recipe. But I did add some grape tomatoes, baby spinach, baby bella mushrooms and feta cheese.
Finally, I flipped one side of the omelette over until it made a pocket. Then it was time to serve and enjoy this veggie filled treat. I opted to make this vegetarian but you can add additional ingredients as you wish.
