Hello divas! I hope that you had a fantastic holiday weekend and are ready for another wonderful week ahead. Mine was busy to say the least and I am so ready for some lighter food to help my body recover from all the yummy treats over the weekend. The temperatures are a little more seasonal but it is starting to feel like spring and early summer here in Tennessee. When it starts to get hot like this, I just don’t want to be in the kitchen cooking or baking. This is the time of year where I love a great salad (see also my summer caprese quinoa salad, easy Italian pasta salad and Asian quinoa salad). So today I am sharing another easy healthy recipe that is also 21 Day Fix Approved – my summer mixed berry chicken salad with vanilla vinaigrette.

I love the summer. It is a great time for those of us who love to cook because there are tons of fresh fruits and veggies in season. I especially love berries. In fact, one of my favorite restaurants to eat at in the summer is Panera because of their strawberry poppyseed salad. I thought it would be fun to make my own version of this salad at home with whatever fresh berries I could find.
This salad is super easy (as salads should be). The first thing you will want to do is cook your chicken. I grilled mine on my indoor grill but you can sautee or bake it as well. While the chicken is cooking, gather all the ingredients together so you can toss them in. You will also want to mix the dressing while the chicken is cooking. Then you are ready to prepare you salad.
Start with preparing your favorite lettuce and greens into a large bowl.
Next add the chicken, fruit, nuts, and cheese.
Finally pour the dressing. After the dressing is added, toss the salad and serve. It’s that easy and makes for a fabulous easy and quick meal when you just don’t want to spend a lot of time in the kitchen.
