Hello divas! I hope that your week has gotten off to a fantastic start so far and that you survived the weekend. My weekend was actually pretty productive so I (for once) am refreshed and ready for this week before a holiday weekend. As you know, this coming weekend is Memorial Day weekend. I love this particular holiday because it does give us a chance to take a moment and thank those that have served and helped our country become what it is today. As a military brat (my dad served in the Army National Guard) and coming from a military family, holidays like Memorial Day are very meaningful to me and I love to celebrate with family and friends. So today I thought I would share another super easy healthy recipe that is perfect for your Memorial Day parties, picnics, cookouts or whatever you have planned – my easy patriotic parfait.
I will be honest and say that this spring has been a bit rough for me. I did run 3 half marathons (well walked anyway), but the rest of my fitness and healthy eating totally tanked. So for this summer, I am trying to focus a little bit more on healthy nutrition in particular (as well as get back on track with the running and fitness). But we know with summer, it’s not always easy to do. I mean who doesn’t love a good ice cream every now and then right? So, with Memorial Day in particular in mind, I created a super easy and healthy snack or dessert option.
What I love about this recipe is how easy it is to make. I mean the hardest and most time consuming part is slicing up the fresh strawberries lol. You can use whatever kind of fruit you like (and there is a lot to choose from this time of year). But keeping with a patriotic theme, I chose red (strawberries) and blue (blueberries). The fruit is layered with vanilla greek yogurt for added protein. You essentially just layer the fruit and yogurt together then refrigerate until time to serve.
