Hello divas and happy Thursday! I hope your week is going well. I am happy to say that after my unexpected rest day on Tuesday, I was able to get back on track with my week yesterday. It is Thursday here at Divas Run for Bling which means it is also time for another edition of Recipe Thursday, my weekly series where I share a healthy recipe of the week.
You all may or may not know this, but I have a bit of a sweet tooth. I love sugar items – cakes, pies, ice cream, candy, you name it. Which as you can imagine can wreck havoc on my diet if I am not careful. Which is why today’s recipe is so fabulous.
While I was at Fitbloggin, I was able to talk to the reps for Health Warrior. This is a company that sells chia seeds and my new favorite go-to afternoon snack – the 100 calorie chia bar. I was super excited as I am a HUGE fan of chia seeds. They are a nutrient power house that packs a nutritious punch without a ton of calories. Just 2 tablespoons of chia seeds contains 11 grams of fiber, 4 grams of protein, 9 grams of fat (5 of which are Omega-3s), as well as other essential vitamins and minerals. That same 2 tablespoons are also only about 137 calories or so.
I use chia seeds all the time. They are great to add to smoothies, oatmeal, baked goods, or just about anywhere else you want to add some essential nutrients to your food. This includes those desserts I am so fond of. Which leads me to today’s recipe – my overnight peach pie chia pudding.
I am always looking for foods that are easy to make in the middle of the week and this recipe is no different. You basically just combine all the ingredients and let sit overnight for a yummy snack, dessert or breakfast the next morning. It is clean, dairy free and oh so yummy. And only 95 calories a serving to boot.
