Hello divas! I hope that you had a fabulous start to the week. Mine has been a little busy but good so far. If you are a regular reader of this blog you know that I oftentimes struggle with eating healthy dinners during the middle of the week. During these times, I like nothing better than to prepare meals that are easy to make. I just don’t have the time most weeks to get fancy. And in our house, we love Mexican food. So today I am another easy healthy recipe – my healthy quinoa enchilada bake.
I love this recipe because it is full of healthy goodness and is super filling. I am a big fan of quinoa (see my quinoa burrito bowls and my quinoa pizza bites) because it is a great source of protein and other healthy goodness. It is a great substitute if you want to go meatless for a meal or two. You can also add whatever veggies (or meat) you have to make this recipe your own.
This recipe is so easy to make and is perfect for those weeknights when you just don’t have a whole lot of time to prepare a nutritious meal. The first thing you will want to do is cook your quinoa. While it is cooking, you can mix all the remaining ingredients except the cheese in a large mixing bowl. Add the quinoa and it is ready to go.
Next, pour your enchilada mixture into a casserole dish and top with cheese. Then put in the oven for 15 minutes.
When done, you have a fabulous, healthy meal that will be a hit for the whole family.
