Hello divas! I hope that your week has gone well so far. The weather has returned to summer like temps here in Tennessee which is a bit of a drag but there is hope for more fall weather to return this weekend. I am looking forward to a weekend at home for once which means I can actually enjoy some of the football games on tv. So with that in mind, I have been on the lookout for some yummy healthy game day recipes. I already have my mango salsa with baked pita chips and my spicy sweet potato fries with greek yogurt dip for the snacking. But I wanted a yummy meal to eat in front of the tv. That’s where today’s easy healthy recipe comes in – my easy quinoa pizza bites.
If you read my blog regularly, you know I am a huge fan of quinoa. I have several recipes using it here on the blog. It is a great alternative to rice and is loaded with all kinds of good stuff for your body. To start this recipe, all you have to do is cook some quinoa. After the quinoa is cooked, you will want to add some eggs (to help it stick together), pepperoni, tomatoes, peppers, onions and mozzarella cheese in a large mixing bowl.
Next, you will spoon the mixture into a greased muffin pan. The good news is that this recipe will make 24 regular size muffins or 48 mini muffins.
Simply bake the muffins at 400 degrees for about 25 minutes and serve with your favorite sauce (I used my crockpot marinara sauce). Don’t they look fabulous?
The cool thing about this recipe is that it is so easy. It doesn’t take too long to prepare. It is also pretty customizable as well. You can add whatever your fave pizza ingredients you like.
