Hello divas! I hope that you have had a fabulous weekend and are ready for another fun filled week. This week is the first week of classes which means it is getting ever so closer to my favorite time of the year – fall. This also means the return of pumpkins, apples and crockpots are just around the corner. So today I thought I would share another super easy healthy recipe involving my favorite flavor of the season – pumpkin. This pumpkin oatmeal is cooked overnight in the crockpot, leaving you with a ready-to-eat delicious healthy breakfast the next morning.
I just love my crockpot this time of year. It make preparing meals so easy. Whether it’s overnight meals such as my crockpot breakfast casserole that are ready for breakfast the next morning or a delicious chili ( see my drunk deer chili or veggie quinoa chili recipes) or soup recipe that can cook all day for a healthy dinner after work, you really can’t beat having one in the kitchen.This recipe is so easy to make. You simply add all the ingredients into the crockpot right before bed, cover and cook on low overnight. When you wake in the morning, you have breakfast ready to go. It also makes a whole lot of oatmeal. I have a 6qt. crockpot and it is filled up! The leftover oatmeal (if there is any) can be refrigerated or frozen to take out and eat at a later date. It only takes a few minutes in the microwave to heat up.
