Hello divas and happy Tuesday! I am so excited about today’s post. For the next month, I will be having a guest poster each week share some yummy recipes that are simple and healthy. Today is the first installment and I am thrilled to welcome Barb from A Life in Balance.
I’m Barb from A Life in Balance, sharing a roundup of healthy and easy to make chicken recipes for your weekly menu plan.
Chicken appears often on my menu plan. Easy to prepare, easy to cook, and versatile, chicken makes up the bulk of the simple dinner recipes on my site, A Life in Balance. For a family of 7, chicken is the cheapest meat to buy with thighs and drumsticks frequently on sale for $.99/lb. Chicken bones have a second life as the basis for stock which in turn flavors rice, soups, stews and casseroles. Truly a versatile, frugal, and healthy meat for any family.
Basic Cooked Chicken
To save time on simple dinner recipes, precook chicken in bulk. Take sale-priced chicken, preferably with the bones in, and simmer it in a large stock pot along with whole peppercorns, salt, 2 bay leaves and about 1 teaspoon of thyme. Make sure the chicken is completely covered by water.
When the chicken is ready, it’s time to take the chicken off the bones. Scoop the chicken pieces out of the pot and set aside to cool. While the chicken is cooling, pour the chicken broth from the pot through a colander to separate out the peppercorns and other bits in the broth. You can freeze this broth in one and two cup portions to use for rice, soups, and stews.
When the chicken is cool enough to handle, remove the meat from the bones and package for the freezer in one and two cup portions. The skin and bones can also be frozen to use later in chicken stock. I like to collect vegetable trimmings in a gallon freezer bag in my kitchen freezer and add them to the simmering chicken stock for extra nutrition.
