Hello divas! I hope you had a fabulous weekend and are ready for a fantastic week ahead. Mine was pretty busy but it was nice overall. But after a busy Mother’s Day weekend where my nutrition was not the best (but it was soo worth it lol), I am ready to get back on track this week – starting with a super yummy and easy healthy meal – my Skinny Chicken Stir-Fry.
My hubby and I love asian cuisine. One of our favorite restaurants is PF Changs and we go there for my birthday every year. But as we all know, asian food is not always the healthiest – especially when it comes to fat and sodium. So I am always looking for a way make a healthier version of some of my favorite dishes – such as this stir-fry recipe.
This particular recipe uses low sodium soy sauce as a way to cut back on the sodium of typical asian dishes. I also grilled the chicken instead of frying it and added lots of colorful veggies to the dish. Finally, I placed the stir-fry over quinoa to give the dish an added nutritional boost.
One of the best things about this recipe (besides how delicious it is) is that you can customize it to your taste. If you do not eat meat, you can leave the chicken out or substitute it will tofu or some other substitute. You can also add additional veggies to it such as broccoli (my hubby and I are not the biggest broccoli fans). Also, if you do not have a wok, this recipe works just as well in a stir-fry or other large fry pan.
