Hello divas! I hope your week has been fantastic so far. Mine was pretty busy but not too bad. Just trying to get back into the swing of things and adjust to my new schedule.
With my getting back to training and running as well as starting with my group fitness teaching, my schedule has suddenly gotten quite packed. Which means I simply do not have the time in the middle of the week to prepare a big dinner. Needless to say I am always trying to find quick easy healthy dinner recipes.
Which is where today’s easy healthy quinoa recipe comes into play. I love anything that is an easy healthy recipe and this Skinny Chicken Stir-Fry is perfect for those busy weeknights when there is just not enough time to cook.
My hubby and I love asian cuisine. One of our favorite restaurants is PF Changs and we go there for my birthday every year. But as we all know, asian food is not always the healthiest – especially when it comes to fat and sodium. So I am always looking for a way make a healthier version of some of my favorite dishes – such as this stir-fry recipe.
This particular recipe uses low sodium soy sauce as a way to cut back on the sodium of typical asian dishes. I also grilled the chicken instead of frying it and added lots of colorful veggies to the dish. Finally, I placed the stir-fry over quinoa to give the dish an added nutritional boost.
One of the best things about this recipe (besides how delicious it is) is that you can customize it to your taste. If you do not eat meat, you can leave the chicken out or substitute it will tofu or some other substitute. You can also add additional veggies to it such as broccoli (my hubby and I are not the biggest broccoli fans). Also, if you do not have a wok, this recipe works just as well in a stir-fry or other large fry pan.
