After a few weeks of spring weather, we seem to have jumped directly into summer lol. With the warmer weather also come the summer foods. One of my favorite things ever is ice cream. But we all know that ice cream can be far from healthy. While it is a fantastic treat in the hot weather, that doesn’t mean it can’t be a bit healthy as well. So today I am sharing another easy healthy recipe – my Skinny Chunky Monkey Ice Cream recipe. And even better is that it is 21 Day Fix approved!

The 21 Day Fix has been amazing for me. It has given me a chance to get back into the swing of things fitness wise without taking up too much time. Each workout is only 30 minutes long and has all kinds of modifications for beginners to more experienced exercisers. The best part of the program, however, is the nutrition plan which has taught me so much about the nutrients I need in my diet as well as portion control and the right amount of each nutrient.
Because of this new eating plan, I have been busy in the kitchen making all kinds of yummy dishes that are healthy, lean and fit with the program (see my skinny strawberry mocha frappuccino and healthy baked penne). I love my Shakeology smoothies that I drink everyday, but I knew there were so many other options out there to use the nutritional powder. Ya’ll know I love my desserts so I wanted to create a fun summer treat that is also good for you.
This ice cream recipe is super easy. Most of the time it takes is when it is freezing to make the ice cream itself. There are only 5 ingredients and it is as easy as putting them all in a blender, blending until smooth and freezing. Once done, you have a healthy snack or dessert that is loaded with essential protein and nutrients (thanks Shakeology!) and fits into any diet (including 21 day fix).
