Hello divas! I hope that you had a fabulous Mother’s Day weekend and are ready for what will be a equally fabulous week ahead (I hope!). It was hard getting this week started this morning, though. It seems that I keep adding so many items to my morning routine that things like a nutritious breakfast seem to fall through the cracks. That’s where today’s easy healthy recipe comes in. With my mornings being so packed, it’s great to have these skinny chunky monkey muffins with Nestlé Carnation Breakfast Essentials so that I can grab a couple and eat them as I walk out the door for work and still manage a healthy breakfast.
If you read this blog, you know I am a big fan of on-the-go breakfasts. I love items that I can grab and go but still give me the nutritional content that I need to get my day started off on the right foot. Muffins are a great breakfast food for this – especially when you use ingredients that pack a punch without any excess fat, calories or sugar.
Nestlé Carnation Breakfast Essentials powder is great for more things than just smoothies (though I do love me a good smoothie :)). The powder can also be added to some of your favorite baked goods like breads and muffins to give them a nutritional punch to start your day off right. One serving of the rich milk chocolate flavor, for instance, only has 130 calories but has 5g of protein, helping to curb your morning hunger.
For this recipe, I started off by stopping by my local Walmart to pick up my Nestlé Carnation Breakfast Essentials powder. It can be easily found on the breakfast aisle. I chose the rich milk chocolate flavor for the purposes of these muffins.
Next I came home and got all the ingredients together to get started. I opted to use a sugar substitute for the sugar, whole wheat flour instead of white flour, liquid egg whites instead of eggs and greek yogurt instead of butter to make these muffins just as delicious but much healthier. I combined all the ingredients into a large mixing bowl and mixed until smooth.
I then spooned the batter into my trusty muffin tin. They bake in 20 minutes at 375 degrees and come out looking great.
