Hello divas! I hope that you had a fantastic weekend and are ready for the week ahead. I have been loving the spring weather here in Tennessee. And one thing I always look forward to in the spring is Cinco de Mayo.
The hubby and I are a big fan of Mexican food so we always love an excuse to eat it and Cinco de Mayo is the perfect time to stay home and have Mexican night. I am so glad to be working with Corona and Modelo today to share another easy recipe – this time a fun cocktail that is goes perfectly with whatever is on your Cinco de Mayo menu, my Skinny Lime Coronarita.
Anyone who knows me well knows I always love a good beer. And Corona and Modelo brands are among my favorites – especially when I am having Mexican dishes. There is just something about enjoying some yummy tacos with a Corona and a lime.
Corona Light is a pilsner-style lager with a uniquely refreshing taste. It is brewed for outstanding light flavor with a crisp, clean finish. The fruity-honey aroma and distinctive hop flavor make it a favorite of beer lovers wanting a light beer that’s full of flavor. Not to mention it’s naturally easy-drinking style makes it perfect for pairing with spicy and citrus-infused dishes.
Modelo Especial meanwhile is brewed as a model of what good beer should be. It’s a rich, full-flavored Pilsner-style Lager that delivers a crisp, refreshing taste. This well-balanced taste and light hop character has a crisp, clean finish and is characterized by an orange blossom honey aroma with a hint of herb. Modelo Especial is a beer born with the Fighting Spirit.
As much as I love a good beer, this year I wanted to do something a little fun when planning my Cinco de Mayo menu. I thought about how much I love margaritas with Mexican food and decided to combine the two to create my skinny lime Coronarita using Corona Light beer.
The first thing I did for this recipe was make some simple syrup. Typically, a simple syrup is 1 part sugar and 1 part water. But if you are a regular reader here, you know that I am trying to cut way back on sugar in my diet. So my skinny simple syrup is made with a sugar substitute (stevia) and water instead. I simply boiled the two together until the sugar was well dissolved into the water.
Next, I squeezed the juice out of 4 limes so that I had them when I got ready to prepare the cocktails. I also cut an additional lime into slices for garnishment. Finally it was time to prepare the drinks. I started by pouring the lime juice, tequila and triple sec into my glasses. Next comes the Corona Light. Finally I poured the simple syrup and mixed it all together. I added a few cubes of ice and the lime slices for garnishment and all done – I had a skinny lime Coronarita ready for my Cinco de Mayo celebration!
