Hello divas! I hope that you are having a fabulous week so far. It’s been pretty good here and I have been able to finally get caught up and back on track . If you are a regular reader, you know that I absolutely love fall. I especially love all things pumpkin and have shared several easy healthy recipes that include the delicious fall ingredient. One of my favorite things about this season is all the desserts – especially pumpkin pie. My mom makes THE BEST pumpkin pie throughout the season. However, my mom’s recipe isn’t the healthiest option out there so I have created this super easy, super delicious and skinny no bake pumpkin pie.
If you are a regular reader of Divas Run for Bling, you know that I have a serious sweet tooth and am always trying to control my sugar cravings. As you can imagine this is very hard to do this time of year with all the yummy desserts. This recipe is so easy to make and still doesn’t have all the sugar, calories and fat of traditional pumpkin pie. It even gives you a good source of protein thanks to the greek yogurt :).
The first thing I did to skinny up my pie was to make my own pumpkin pie filling. I wanted the filling to me healthier than what you buy in a can. So I put a can of 100% pumpkin into a large mixing bowl and combined it with some maple syrup (you can also use a sugar substitute) and the pumpkin pie spice. Then I was ready to prepare my pie.
Next, I took the lower sugar filling I made and combined it with some cinnamon and fat-free vanilla greek yogurt. I mixed these ingredients up with my blender until it was smooth and fluffy then poured it into a graham cracker crust. I placed it into the refrigerator for 2 hours then had a slice for dessert. This was so easy to make and turned out quite delicious!
