Hello divas! I hope that had a fantastic weekend and are ready to start this first week in August. I was gone all weekend to Nashville for the Beachboy Coach Summit so I am still trying to get back into the swing of things lol. It was a great weekend, though and can’t wait to go to New Orleans for next year’s summit. But one thing I realized this weekend was that my nutrition has not been on point this summer. Like at all. It’s been a real struggle at times – especially with all my traveling. So today I thought I would share another easy healthy recipe that can fit into a healthy eating plan (including mine). And with fall coming just around the corner, I thought it would be fun to use one of my favorite flavors, pumpkin, for some skinny pumpkin protein muffins that are perfect for breakfast or a healthy snack.
Growing up, I used to love when my mom made muffins. Granted a lot of times they were the kind where you buy the mix and just add milk, but I loved them nonetheless. It didn’t really matter what kind she made. Muffins were always one of my favorite breakfast items (see also my skinny gingerbread muffins, my skinny chunky monkey muffins and my blueberry avocado muffins). They were something that could be made relatively quickly when you were short on time and eaten on-the-go if need be. They were also one of the things that my 2 sisters and myself could agree on that we wanted to eat.
In fact, that’s the thing I love most about muffins – how versatile they are. You can have a couple for breakfast or grab one for an on-the-go snack. I love experimenting with different flavors and especially love making the healthier. For this particular recipe, I substitute some of the traditional muffins/baked goods ingredients such as flour, butter, eggs, and oil for healthier alternatives, making these muffins a fabulous way to start the day or keep your appetite in check as an afternoon snack. And I am a HUGE fan of all things pumpkin this time of year so what better way to get ready for fall than with the easy, delicious and healthy muffins?
