Hello divas! I hope that your weekend has been fabulous and you have great plans for the week ahead. I can’t believe that February is here and Valentine’s Day is just around the corner. I am so excited to be traveling for the holiday this year (I will also be running a half marathon lol). But for those of you who will not be traveling, I thought I would share an easy healthy recipe that is perfect for the night in – my spaghetti with breadcrumbs.
There are so many reasons to NOT go out on Valentine’s Day. You’ll save money, you’ll save time and hassle and you won’t have to deal with the massive amounts of people at the restaurants. But you also don’t want to spend the day slaving away in the kitchen either – you want to actually ENJOY the day.
The great thing about this is that it literally took me about 10 minutes or so to cook. I paired it with a winter salad and a glass of wine, making it a fabulous Valentine’s Day meal idea. It can also be customized to your tastes by adding meat if you like or some yummy veggies such as mushrooms.
You will start by cooking the pasta according to the box. I used whole wheat pasta for this recipe, but you can opt for the veggie version or even use some spaghetti squash. While that is cooking, prepare the olive oil and breadcrumbs mixture and the winter salad. Once done, you have an easy and delicious meal to enjoy with your significant other.
