Hello divas! I hope that you have had a wonderful weekend and are ready for a fabulous week ahead. My weekend was pretty good. The weather was gorgeous after a few days of bad thunderstorms last week so I was able to enjoy some time outdoors.
One of my favorite things about this time of year is that the spring and summer produce starts to come into season. I LOVE strawberries this time of year especially. They can be put into so many different recipes and are among the lowest sugar fruits out there. Which is great for someone like me who needs to watch their sugar intake. So today I am sharing another fabulous easy healthy recipe that is perfect for spring- my easy healthy strawberry banana bread.
One thing that I am loving at the moment is the fresh strawberries that have come in season here in Tennessee. Strawberries are one of my absolute favorite fruits and this time of year I eat them as much as I can. I love taking some of my favorite recipes from childhood such as my grandmother’s banana bread and making them both healthier and adding my own take to them – such as my favorite fruit.
The thing I like about baking homemade bread is how versatile it is. My family has been known to eat fruit bread for dessert, breakfast or just a yummy snack. As with many of my recipes, I have substituted some of the unhealthier ingredients for healthier and cleaner versions. I used strawberries with this recipe, but you can use any fruit you want or use just the bananas. It is totally up to you.
