Hello divas! I hope that you have had a wonderful weekend and are ready for a fabulous week ahead. My weekend was busy and HOT. I was so super thrilled to run the Braves Country 5K in Atlanta and spend the day at both the game and the College Football Hall of Fame in Atlanta (more to come on that this week!). But I am glad to be back home and get started with the week. Except for the insane heat and humidity, I just love this time of year. All the fruits and veggies are coming into season which means there is a lot of cooking and baking with fresh produce (such as my blueberry avocado muffins). So today I am sharing another fabulous easy healthy recipe – my easy healthy strawberry banana bread.
One thing that I am loving at the moment is the fresh strawberries that have come in season here in Tennessee. Strawberries are one of my absolute favorite fruits and this time of year I eat them as much as I can. I love taking some of my favorite recipes from childhood such as my grandmother’s banana bread and making them both healthier and adding my own take to them – such as my favorite fruit.
The thing I like about baking homemade bread is how versatile it is. My family has been known to eat fruit bread for dessert, breakfast or just a yummy snack. As with many of my recipes, I have substituted some of the unhealthier ingredients for healthier versions. I used strawberries with this recipe, but you can use any fruit you want or use just the bananas. It is totally up to you.
