Hello divas! I hope that you had a fantastic weekend. It was a little odd to say the least here in Tennessee with cold weather, followed by a very light dusting of snow followed by 60 degrees and sunny. But it was also relaxing and there was a bit of basketball watching involved as well.
One thing I was able to do this weekend, though, was spend some time in the kitchen. Specifically, I finally tried my Instant Pot Pressure Cooker that I bought with birthday money. It was FABULOUS. I mean I made brown rice (not the instant kind) to go with some fish for dinner in 22 minutes!
I also wanted to try out a new recipe that I could share with you lovelies. As you know, I am a big fan of breakfast. Though I don’t always have a whole lot of time to prepare a healthy one. Which is where today’s easy healthy recipe comes into play. Check out this easy healthy breakfast recipe – my healthy Instant Pot strawberry cheesecake breakfast quinoa.
If you are a regular reader of this blog, then you know that I am a BIG fan of quinoa. I mean it’s basically a seed that is eaten much like a grain such as rice or oats. But it is PACKED with healthy goodness such as being high in fiber, gluten-free and very high in protein. In fact, on those days where I don’t eat meat, I typically eat quinoa as one of my proteins for the day.
But as much as I love quinoa, I typically keep it to mostly lunch and dinner recipes. It’s perfect for that right? Which got me to thinking. Why can’t I also enjoy quinoa at breakfast time and give my body a good dose of healthy goodness to start the day. And since my Instant Pot rice turned out so well, why can’t I also cook the quinoa in the pressure cooker?
This recipe is about as easy as it comes. Much like if you were preparing this overnight in the crockpot, you simply take all the ingredients (quinoa, water, vanilla, sweet spice, greek yogurt, strawberries, honey) and place them in the Instant Pot. You then seal the lid and set the cooker to pressure cooking for 1 minute. Yes. This only takes 1 MINUTE to cook.
After the Instant Pot finishes cooking, I let it release the steam naturally for 10 minutes before releasing the pressure with the valve. Once that is done, simply open the lid, serve some of the quinoa in a breakfast bowl and enjoy!
