Hello divas! I hope that your week has been fantastic and you are planning for a fun filled holiday weekend ahead. Mine will be fairly busy but fun (I hope). But with all the weekend planning, my week has been packed. So I thought I would share another yummy easy healthy recipe that is perfect for the summer (and all your summer events) – my easy summer caprese quinoa salad.
I am a big fan of quinoa if you haven’t figured that out by now. Whether it’s in a salad (see my asian quinoa salad), stir-fry (see my skinny chicken stir-fry) or any other yummy dish (see my quinoa pizza bites or my quinoa enchilada bake), it is a fabulous way to get protein and other important nutrients in my diet without always eating meat.
This quinoa salad is so easy to make as well. You start by cooking the quinoa. While it is cooking, be sure to chop up the tomatoes and mushrooms and mix the homemade balsamic vinaigrette.
Once the quinoa is done, mix it with the tomatoes and mushrooms in a large bowl. Next you add the mozzarella (I opted for shredded but you can use chunks if you like) and the dressing and mix until evenly distributed.
This recipe is also customizable. I opted for a basic caprese salad. However, if you would like you can add meat such as grilled chicken if you like. I also am not a huge fan of peppers (I get heartburn from time to time) but you can add them if you are. Either way you have a super easy and deliciously light salad perfect for summer.
