Hello divas! I hope that you had a fabulous weekend and that you are ready for another fun week ahead. It was a bit of a busy weekend for me as I was in Raleigh, NC to run the Rock n’ Roll Half Marathon. But I am back home today and I for one am ready for this cold snap to end and the weather to feel more like spring and summer. One of my favorite things to do when the weather warms up is to get out the grill. My hubby and I love our charcoal grill and use it all spring, summer and into the fall. So today I am sharing another easy healthy recipe that is perfect for those summer barbecues (see also my skinny banana split trifle and easy Italian pasta salad). Try these easy and healthy grilled vegetable kabobs.
One of my favorite things about summer is all the fresh produce. It is a time to eat lighter and local and have meals that are delicious, colorful and healthy. It is even more fun when you can throw said produce on the grill and enjoy eating outdoors. I love kabobs because they are so easy to make and so fun to eat.
This particular recipe is customizable in that you can use whatever veggies or fruit you have on hand. I opted for all veggies and used some fresh summer squash, zucchini, yellow peppers, orange peppers and grape tomatoes.
I began by slicing the vegetables and sliding them on the skewers.
Next, I mixed up the glaze I wanted to use and brushed it over the veggies. I let the skewers set and marinate for a bit while the charcoal was burning in the grill.
Then it was time to put them over the flame. I let them grill for about 10 minutes before turning them over to grill for another 10 minutes or so. When this was done, I had a fabulously healthy and delicious side dish for my family barbecue.
