Hello divas ! I hope that you have had a fantastic weekend and are getting ready for another week. My weekend was a pretty low-key and I was able to get some work done which is always good. I also napped a lot lol.
One thing you know about me if you are a regular reader of this blog is that I love easy healthy recipes. I don’t always have time to slave away making a healthy meal so dishes that can save me some time are always welcome – especially in the mornings.
I am starting a new fitness program tomorrow (Shift Shop) which I hope will help jumpstart my fitness and nutrition for the rest of the year. One of the things about this 21 day program is that there are no grains for the length of the program and you will eat fewer starchy veggies as you go so I have been looking for protein-rich breakfast ideas in particular. So today I am sharing another of my favorite quick and healthy breakfast recipes – my veggie omelet bites.
I don’t know about you, but my weekdays are super busy. Between getting my workouts in, working 40 hours, preparing meals, running errands and managing to find some time to spend with the hubby and the blog, I often find myself short on time. So I am always trying to find yummy and healthy recipes for breakfast and dinner that can be prepared quickly and easily.
I love this particular recipe because it is just that – healthy and easy. You can make these ahead of time and heat them up when you are ready to eat. They also make omelets easy to grab on your way out the door on those mornings that you sleep through the alarm clock (true story). I added some of my favorite veggies and cheese to these bites, but these are so easy to customize to your tastes and dietary needs.
