Hello divas! I hope that you are recovering from the Thanksgiving holiday and having a fantastic week. It has been quite busy around here for sure. I have 2 different Christmas parties this week as well as it is finals at work (I work for a university). So as you can imagine it can be hard to prepare a healthy meal this time of year with all the running around and holiday activities. This is where my easy healthy recipes come in handy. Today I am sharing my healthy winter salad recipe which I paired with STOUFFER’S® Lasagna with Meat Sauce for a 30 minute weeknight meal.
I have always been a big fan of STOUFFER’S® Lasagna. Growing up, my mom would cook it for us at least a couple of times a month because it was so easy and so delicious. You have the option to bake it in the oven. But on those super busy nights, I prefer to cook it in the microwave – it takes less than 30 minutes from start to finish. This allows me to get other things done around the house (such as a quick workout) while it cooks then I can sit down and enjoy the meal. It also comes in different sizes based on the number of servings you need. I typically use the family size and it is just the hubby and myself. With this size, I even have leftovers.
I love to pair a salad with my lasagna to give the meal some added nutritional goodness. This time of year there is nothing better than a yummy healthy winter salad. This salad is super easy to throw together while the lasagna is baking in the microwave and contains salad greens, apples, cranberries, walnuts and a vanilla vinaigrette. You can also add some feta cheese on top if you like.
To get started with my meal, I took a trip to my local Walmart on the way home from work to purchase my STOUFFER’S® Family Size Lasagna with Meat Sauce and the ingredients for my salad. I found it is the freezer section and was thrilled that it is currently on rollback through 12/31/15! Then I headed home to prepare my meal.
I started by getting the lasagna on to cook in the microwave by following the directions on the box. This way it comes out perfect and ready to eat.
While the lasagna is cooking, I set out to prepare my salad. The best part of salads such as this is that you literally just throw everything together and toss. So I placed the greens, chopped apples, dried cranberries and walnuts in a large salad bowl. From here, I whisked the olive oil, balsamic vinegar, vanilla and raw hone in a small mixing bowl to make the dressing. I poured it over the salad and tossed until it was mixed well.
By now the lasagna was done so I put a serving on a plate, put some salad in the bowl and set down to enjoy a yummy healthy dinner with the hubby.
