Hello divas! I hope that your week has gotten off to a fantastic start. Mine has been pretty good. I have been enjoying slightly cooler weather compared to what I was dealing with last week (that’s Tennessee for you!). I have also been loving grocery shopping and all the fun fall produce that has started to come into season.
All this cooler weather really gets me in the mood to have some of that fall produce on my table. Two of my faves are apples and sweet potatoes and I especially love having them together.
So today I thought I would share another easy healthy recipe, this time a healthy side dish option to go with all the fall meals (or my Thanksgiving table for that matter) – my honey whiskey apple and sweet potato bake.
If you read my blog regularly, you know I am always trying to find ways to have delicious food without some of those extra calories and fat. I love things that you can throw together quickly and either bake or put them in the crockpot to cook while I do other things. This particular dish is no different.
I love this dish because it is so easy to make and a healthy alternative to many other side dishes of this season. Or if you are looking ahead to Thanksgiving already, this is a great alternative to something like the delicious but not that healthy sweet potato casserole. This dish uses raw honey so it is also a clean eating option . I also used my favorite spice blend of the season (pumpkin pie spice) to season the apples and sweet potatoes as they bake. Also, if you do not cook with alcohol, you can leave the whiskey out.
