Hello divas! I hope that you have had a fantastic week and are planning for a fun filled weekend ahead. Mine will be spent at home but I plan to enjoy the fall weather now that it has FINALLY decided to show up here in Tennessee.
If you have kept up with my blog, you know that I love nothing more than easy healthy recipes. And this time of year, I especially try to find new and interesting dishes that can be used as healthy sides to your fall meals (including the upcoming holidays such as Thanksgiving). So today, I am sharing my Balsamic Parmesan Green Beans recipe to try out this fall.
I am always trying to find new and interesting ways to enjoy my veggies – especially during the fall when there are all kinds of holidays and special events to think about. And I love when I get to spend time with the family. But you can imagine that there is a ton of food involved and it is not all good for me (though it’s soooo delicious). It is sometimes hard to eat completely healthy at these meals. Now I am all about eating in moderation. I mean I sure won’t be completely giving up some of my favorite fall and holiday treats. However, there are some great dishes out there to enjoy that are still healthy.
What I love about this recipe is that it is so simple to prepare, yet there is not a lot of extra fat, calories and other not-so-good-for-you stuff added to the dish like sometimes happens with the traditional green bean casserole. For the purpose of this recipe, I used some of my grandmother’s canned green beans that I drained and rinsed (she uses a lot of salt in her canning). You can use fresh or frozen green beans as well. I also used a custom spice blend that is made here in Chattanooga, but you can use any italian spice blend.
