Hello divas! I hope that you had a fabulous week so far and are looking forward to the Easter weekend ahead. I will be traveling to see family this weekend so it should be fun.
I don’t know about you but my mornings are often quite hectic. I really love to sleep so I don’t always plan ahead enough to wake and prepare a super healthy breakfast. Which means that it is always helpful to bake some healthy breakfast items ahead of time.
One of my all-time favorites is a batch of my yummy clean eating blueberry avocado muffins. Now ya’ll know how I love my muffins (check out my other muffin recipes on my easy healthy recipe page). So it is no surprise that these are a big hit at my house.
Now I will be upfront in saying I am not a big avocado fan. I generally don’t like them plain, I don’t like guacamole and I don’t like them in smoothies. So you are probably looking at the title of today’s post and wondering why the heck I am sharing a recipe that has avocados in it. As you probably know, avocados are chalked full of vitamins and minerals, including the good fats that help lower cholesterol. And it is when you substitute avocados for saturated and trans fats that you can make some of your favorite foods healthier.
These muffins were to die for. The best part was that instead of butter, avocados were used. Seriously. Pretty much almost all the fat in these muffins were the good fats.
So today I am adapting the Blueberry Avocado Muffin recipe to share with all you lovelies. I have substituted the wheat flour instead of all purpose flour , sugar substitute instead of sugar and the greek yogurt instead of plain yogurt. I have also left off the streusel topping.
