Hello divas! I hope that your week has gotten off to a great start so far. It’s March 1st. Can you believe it? One of my favorite things about March comes all the tournament basketball games. I grew up in a basketball family – my grandfather, aunts, uncles and cousins have all played, my dad was a basketball ref for years and I was a basketball cheerleader through middle and high school. Needless to say I am a fan lol. And one of my favorite things to eat when I’m watching all the big games is buffalo chicken. So I thought that today would be a great time to share a new easy healthy recipe just in time to plan your basketball parties – my buffalo chicken pizza with a cauliflower crust.
But with all the game day festivities and foods, comes a bit of reality. Let’s face it. As you get older, it gets harder to cope with the fun. Whether it’s the loud noises, yelling at the refs through the TV and stress of hosting a fun watch party causing you to get a massive headache or all that yummy game day food such as this pizza causing you some heartburn, game day can be tough. Anything buffalo chicken (including this pizza recipe) are my faves when I’m lounging on the couch enjoying the game. Buffalo chicken is one of my favorite things to eat anytime I am watching a sporting event. I especially love wings. But as someone who is trying to eat a healthy diet, my fave wings just don’t fit into the plan. So I wanted to create a super fun recipe that is both healthy and helps me get my buffalo chicken fix while watching all those March basketball games. This pizza recipe is great because it has a cauliflower crust. This keeps low in calories and is a great way to sneak in some veggies.
The first thing you need to do in order to prepare the pizza is to set the oven to 450 degrees. While it is warming up, you will need to prepare the crust by ricing the cauliflower. I did this by placing the cauliflower florets into a food processor and pulsing until I got the consistency of rice.
Once the rice is ready, I cooked it in a microwave safe bowl in the microwave for 5 minutes. Next comes making the cauliflower rice into some pizza dough. I added an egg, some parmesan cheese, and italian spices to the rice and mixed until there was a dough-like consistency. From there, I patted the dough onto a greased cookie sheet until it was about a 9 inch circle. Bake the dough in the oven for about 15 minutes.
While the crust is baking, I prepared all the pizza toppings. I mixed the buffalo sauce, cooked the chicken and let it marinate in the sauce and gathered the cheese and veggies. Once the dough was done, I topped the pizza and baked for another 10 minutes or so.
When done, the hubby and I had a fantastic and healthy buffalo chicken pizza as we set down to watch some basketball.
