Happy Thursday everyone! This means it’s time for another edition of Recipe Thursday where I share one of my favorite recipes of the week. I am super excited about this recipe I am sharing today.
I don’t know about you all, but I like to sleep. I can honestly say that I never have an issue getting enough sleep. Unfortunately, liking to stay in bed and sleep can sometimes lead to extremely busy mornings. Which sometimes lead to rushed breakfasts or quick breakfasts which leave me hungry an hour later. So I am always looking for a healthy, filling breakfast option that is also quick and easy.
I especially love the kinds of breakfasts that can be prepared the night before and left overnight to be ready the next morning. For instance, I love my Crockpot Pumpkin Oatmeal Recipe. Anything that makes my life easier in the mornings is a good thing.
Today I am sharing another breakfast recipe that can be prepared the night before – this time in the refrigerator. The cool thing about this overnight quinoa recipe is that you can customize it to your own tastes. You can make it with fruit, flavorings, add extras for vitamins and nutrients. You can even make this vegan or clean depending on the types of milk and extras you add to it.
I am sharing my recipe for the chunky monkey overnight quinoa version. This recipe is clean as I have used almond milk and organic ingredients. But feel free to play around with it and make it your own.
