Hello divas! I hope that you had a fantastic weekend and are ready for another week ahead. Mine was pretty good as we had a light dusting of snow which means I was able to stay indoors and get some work done.
One of my favorite times of the year is coming up – Mardi Gras. While I have never been to Mardi Gras myself, I have been to New Orleans a few times. One of my favorite part of the city is the food. I just love the cajun dishes with all the spices and textures and wanted to try to make some healthy Mardi Gras recipes this year.
I am always trying to make some healthy crockpot recipes. So I thought I would take a traditional cajun dish, throw it into my crockpot and make it into one of my easy healthy recipes – healthy crockpot jambalaya.
One of my favorite dishes to eat anytime I head to Louisiana is the jambalaya. It can be made is different ways but all of them include being loaded with protein (I make mine with 3 meats!). It is a very filling dish and I love the bit of spice that cajun dishes have. I chose to make the recipe healthier by using turkey smoked sausage, chicken breast and shrimp. I also opted for brown rice so that I could get the whole grains into my diet.
I just love my crockpot during those busy weeks. You can do so many recipes using it, including this one. I started off by cutting up my smoked sausage and chicken and putting them in the crockpot. Next, I added the shrimp then the okra, tomatoes, peppers and onions. Lastly, I added the rice, a bit of water and all the spices. I put the lid on, turned the crockpot to low and headed to work. By the time I got home, the house was smelling like cajun food and it was ready to dish out and enjoy.
