Hello divas! I hope that you had a fantastic weekend and are ready for another week. My weekend was pretty great. As it was feeling more like fall (FINALLY) and mom’s birthday is today, the hubby and I drove down to visit mom and make our first trip for apples for the season. This is a yearly tradition with my family that I LOVE and look forward to. Which means I bought A TON of fresh apples to use in some of my favorite recipes – like today’s easy healthy recipe.
So ya’ll know how much I love to snack and that I am always looking for yummy but healthy snack options to add to my healthy eating. Growing up one of my favorite snacks come fall was my grandmother’s homemade applesauce (from the apples we buy every fall).
I love my family, but most of my favorite recipes growing up were less than healthy. I wanted to find a way for the applesauce to be both easy to make and to be a healthy snack option. What I ended up with is my simple healthy crockpot vanilla applesauce.
One of the things I have fallen in love with since becoming an adult and actually having to prepare meals for myself and the hubby is my crockpot. It just makes dinner preparation so much easier when you can throw the ingredients into the crockpot and let it cook all day. I also love that you can make all kinds of things in the crockpot. It is not just soups, stews and chilis (though I love making them in the crockpot!) anymore. You can also do drinks, desserts and even snacks such as this applesauce.
While my grandmother would spend hours cooking the apples, making the applesauce and canning it, I wanted to take an easier route. This recipe is super easy to make with only a few ingredients. And it makes just enough for a few snacks without having to make so much that you have to put in the extra time to can it (though I do love the canning option from time to time). With traditional applesauce, you would usually add some sugar to the recipe. I opted for some raw honey instead as my sweetener of choice. I also added some vanilla because I am a big vanilla fan. To make the applesauce, you simply cut the apples, add the other ingredients then let them cook in the crockpot on high for 4 hours. It’s that easy.
