So if you know me at all, you will know that I have a serious sweet tooth. I love my desserts and I love my sugar. Which as you can imagine makes eating a healthy diet a little difficult. Which is why I am always looking for ways to create easy healthy dessert recipes out of your typical desserts – such as cake.
I love cake so I set out to find a way to substitute healthier ingredients to create a healthy cake recipe. So check out this yummy easy healthy recipe – my healthy vanilla maple greek yogurt cake.
I have always been a fan of making some of my favorite recipes healthier. I mean that’s the whole reason why I started adding recipes to this blog – to enjoy some of our favorite foods without so much guilt. Which is how I became a big fan of baking with items like greek yogurt, maple syrup and coconut oil. They are healthier and less processed alternatives to sugars and oils. And in the case of greek yogurt, give you a dose of protein that your body needs anyway.
This particular recipe is super easy to make. The longest part is the actual baking of the cake. I also like that it is light enough that it can be eaten as a breakfast or snack as well without too much issue. It can also be altered to include things like your favorite fruit if you want some additional flavor (I love strawberries myself).
To start the recipe, you want to preheat the oven to 350 degrees. Then take a medium mixing bowl and beat the eggs. Next, you will add the coconut oil, maple syrup, vanilla and greek yogurt and mix until smooth. Finally add the flour and baking powder, beat until smooth and pour into the cake pan. It will bake for about 35 minutes. When done, you have a delicious light cake with just enough sweetness to satisfy your sweet tooth. You can add just about any topping you like to the cake (I like sugar free whipped topping and fresh strawberries) or you can keep it simple with just a light dusting of powdered sugar.
