Hello divas! I hope that your week has gotten off to a great start so far. I had a pretty good Monday, complete with a sneak peak of a new workout program that is coming out in July. It was different but really fun so I am excited about it.
It has hot here in Tennessee so I spent a bit of time indoors trying to stay cool except for my morning runs. This has allowed me to have some fun in the kitchen preparing some easy healthy recipes that fit with my healthy eating plan.
Anyone who knows me knows I love me some pasta (I am a runner after all!). I mean with my training, teaching and generally just trying to get into and stay in shape, I need at least some carbs in my life (though as per my doctor, I am trying to limit them a bit). So today I thought I would share one of my favorite recipes – my 21 Day Fix approved healthy baked penne.
This recipe is fabulous and is ready to eat in 30 minutes. If you are following the fix plan it is also 1 purple container (the marinara sauce), 1 red container (the meat), 1 yellow container (the pasta) and 1 blue container (the cheese). For those not on the fix nutrition plan, it is simply a low-calorie, quick and healthy meal that is perfect weeknight meal for the whole family.
It is also easy to make. You simply cook the penne according to the box and brown the meat. For a vegetarian version, you can add some tofu or other meatless protein. Once those two ingredients are done, you combine them with the sauce (I used my homemade crockpot marinara), seasonings, vinegar, parmesan and honey. Pour into a large casserole dish, top with Italian cheese and bake for 20 minutes at 250 degrees.
This recipe is pretty customizable to your tastes. You can add some additional veggies if you like such as mushrooms. You can also use ground turkey or wild game like venison if you are a meat person.
