Hello divas! I hope that you have had a great weekend and are ready for a fantastic week ahead. Mine shouldn’t be too bad thank goodness. One thing I am focusing on this fall is trying to get back to the healthy habits I have set up for myself but that have fallen by the wayside over the summer. One important habit that I have let slip is the simple act of bringing a healthy lunch to work everyday so that I am not tempted to grab fast food instead. When deciding on a lunch, I am always looking for meals that are easy to make as well as healthy. So today I am sharing one of my favorite go-to easy healthy recipes for lunch – my healthy pasta salad.
One thing that I have learned as I have gotten older is that it is great to find shortcuts where you can. While I LOVE spending time in the kitchen on the weekends when I have some time, the weekdays are another story. I just don’t have the time to fix big, complex meals after working all day. So I always try to find some quick and easy meals for the middle of the week so that I can continue to eat a healthy diet that can either be for dinner with leftovers or simply to prepare ahead for lunch.
I have been making this particular recipe for years – probably since college in fact. It is a fabulous recipe because it is so easy to make. You can make a bit batch of it and take it to potlucks and family meals or just have enough for lunch all week long. It is perfect for a quick, one bowl meal and can become vegetarian by simply leaving the chicken out of it. And it is served best cold so you don’t even have to heat it up!
** If you prefer to make individual servings of this recipe, simply store all ingredients in the fridge separately. When ready to eat, mix together 1/2 cup pasta, 3/4 cup chicken, 1/4 cup cheese, 1/2 cup mushrooms, 1/2 cup tomatoes, onions and peppers mix and 2 tbsp. of dressing.
