Hello divas! I hope that you had a fabulous week so far. It has been pretty good so far for me, though a little busy. If you read this blog, I work full-time and don’t always have time to prepare delicious but time consuming meals. So I am always trying to find easy healthy recipes to prepare on those busy weeknights when I have to balance getting home from work, my workouts, preparing dinner, spending time with the hubby and doing a little blog or social media work. I also try to eat vegetarian or vegan at least part of the week so meals without meat are always welcome as well. The recipe today is one of my favorites – my quinoa burrito bowl.
I love this recipe because it is so easy. It takes about 15 minutes to prepare, making it fabulous for those weeknights when you are sometimes strapped for time. It’s as easy as cooking the quinoa, corn and beans then assembling all the ingredients into a bowl to enjoy.
This recipe is also a yummy meatless option for those who are vegetarian (or like me eat vegetarian part of the week). For convenience sake, I use canned corn and black beans. Though I do rinse them really well before cooking to get rid of some of the preservatives used in the canning process. You can also add more veggies to these bowls such as peppers or mushrooms if you wish.
